Air Fryer: Roasted Parmesan and Rosemary Potatoes

Run. I'm not kidding, RUN to your Air Fryer and make these right now. These Air Fryer Roasted Parmesan and Rosemary Potatoes are the best potatoes I've ever had. The outside is crunchy and the inside is incredibly soft.

I am forever trying to make the perfect breakfast potato. I like my roasted potatoes like I like my fries, super soft on the inside with a textured and very brown outside. In the past, I've started these on the stovetop in my cast iron (using a LOT of oil), then transferred to my oven. It would take me close to an hour and use a lot more energy. These just take 20 to cook and about 3 minutes to prep. While they are cooking you can poach a few eggs. I'd even try placing some ham below these to cook at the same time!

I'm big on flavor and these little bites of heaven are PACKED with savory goodness. I tested these with both garlic powder and fresh garlic. Although I like how the fresh garlic crisped up, it didn't stay on the potatoes as well. If you like garlic as much as I do, you may want to try doing both! The Parmesan makes these even more buttery. I was worried that it might brown too fast but in all of my tests, it came out perfect every time. I cooked these at 360°F for 20 minutes in my CHEFMAN XL 5.5L Air Fryer. If you have a smaller Air Fryer, you will need to do these in two batches.

Air Fryer Roasted Parmesan and Rosemary Potatoes

Savory roasted potatoes with Rosemary, Garlic, and Parmesan.
prep time: 3 MINScook time: 20 MINStotal time: 23 mins

ingredients:


  • 2 large russet Potatoes, diced large
  • 1 TB Olive Oil
  • 1/4 Cup Grated Parmesan
  • 1/2 tsp Rosemary, very finely chopped and packed into measuring spoon
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Kosher Salt (or more to taste)
  • 1/4 tsp Paprika
  • black pepper
  • (Optional, dash of Cayenne for some spice)
  • (Optional, 1/2 onion sliced)

instructions

Air Fryer Method
  1. In a large bowl (or ziplock) add all ingredients and mix thoroughly until potatoes are evenly coated. There should be enough oil to get most or all of the Parmesan to stick. 
  2. Spread out in your air fryer basket, set to 360° F and cook for 20 minutes, shaking when there is about 5 minutes left.
  3. That's IT! Have these with eggs for breakfast or as a side with your dinner. (It's delicious with Sous Vide Steak)
Oven Method
  1. Pre-heat oven to 400° F
  2. Mix all ingredients together and spread out on a baking tray.
  3. Bake for 50-55 minutes, turning every 15 minutes or so with a spatula.
